Title presentation: Genomic tools for the improvement of industrial fermentation processes and identification of health-promoting ingredients.
 
The genomic era has revolutionalized our understanding of industrial microorganisms and how they behave under different conditions as well as their capabilities to respond to different stressors. At NIZO food research we have converted this knowledge into genomic tools that aid our industrial partners to increase industrial performance and robustness of their microorganisms. These tools also aid in the characterization and monitoring of complex microbial communities such as the one residing in our gastrointestinal tract. By doing so we can identify microbiological biomarkers related to health and disease and identify food ingredients which can potentially modulate these biomarkers to improve health.
